Chicken tostadas

Ok so I know this is not a dessert but it is an amazing simple recipe that I have to share.
Chicken tostadas are a classic Mexican food that is packed with flavor.
This is a prepare ahead frozen meal to cook up on a lazy day that makes people think you cooked all day;)

Heres the recipe:
1lb Chicken breasts (or tenders)
1 packet of taco seasoning
1 can of tomatoes diced
1 can of corn
1 can of black beans
1/2 chopped onion
(optional) any other canned vegetable you like!
1bag corn tortillas
1 bunch of cilantro
M.O.P:
Mix everything (except for the tortillas and cilantro) in a ziplog bag and leave it in the freeze for as long as you want.(the longer the better).

Day of cooking:
Put the frozen meal in a pot and cook on low heat and let simmer for about an hour till the chicken is shreedable.
While that is cooking, lightly fry the tortillas in a tsp of oil till crispy.
Place on a napkin to dry off extra oil and sprinkle with salt.

Once the chicken is cooked pour a spoon full over the cooked tortilla and sprinkle with cilantro.(sour cream is optional).
